Chicken and capsicum stir fry

This is simple, satisfying and quick



Preparation time: 15 minutes Cooking time 10 minutes Serves 4


2 chicken breasts thinly sliced
1/2 cup plain flour
6 cloves garlic minced
1 tablespoon vegetable oil
1 chilli minced
1 red capsicum thinly sliced
1/2 onion thinly sliced
2 tablespoons soy sauce
1/2 cup green veg (anything in season)


  1. coat chicken in flour and shake off excess
  2. heat oil in wok and stir-fry chicken in batches and remove when cooked
  3. add garlic, chilli, onion, and capsicum and stir-fry until the garlic is golden
  4. add soy sauce and green veg 
  5. bring to the boil for a minute until sauce thickens slightly
  6. serve with steamed rice
